Soccermania!


Ireland play Spain Tonight so it’s gotta be an easy tasty dinner or some easy nibbles with a group of friends watching the game!

Easiest & one of the Cheapest  Dips

Donelli's Version of Tzatziki

6 tablespoons of natural yoghurt – 2 cloves of garlic chopped very finely – ¼ cucumber chopped finely- ¼ cucumber grated – mixt it all up and serve
with

Pitta bread – cut into bit sized pieces, drizzle with olive oil and pop into a heated oven for 10 mins @ 180.

Mini hamburgers

4 handfuls of minced beef
1 egg whisked
Salt & Pepper

Mix together – shape into small patties and press into burger shapes- pop in the fridge for 30 mins.  Heat a pan and cook for 1 min each size – then into the @ 180 oven for 10 mins.

Chicken Wings

Pop into a bowl and combine Sweet Chilli, Soy & squeeze of 1 lime – add the chicken wings mix well and lay flat on a baking tray cook again @ 180 for 20 mins.

Cocktail Saussies

1/2 kilo of cocktail saussies
3 tablespoons of honey
2 tablespoons of wholegrain mustard

Combine the above and spread on a lined baking tray – cook @ 180 to 200 for 15 to 20 mins. 

Homemade Pizza ideas…

USE - Pizzas bases– Pitta bread or Ciabatta sliced in half

Spread base with Tomato Relish – Chutney – Pesto

Top with:
    Mozzarella, Sunblushed tomatoes, Salami

    Ham, Mozzarella & tomato

    Ham, pineapple mozzarella
  
    Chorizo, Roast Peppers

    Buffalo mozzarella, fresh tomatoes

Or make some .....

Fresh Tomato & Basil Crostini

Ten Slices of French Bread or Ciabatta:
3 Irish Tomatoes chopped
1 clove of garlic chopped v finely w a little salt
4/5 basil leaves shredded
Extra Virgin Olive Oil

Pop the bread on a baking tray, drizzle with oilive oil and bake in the oven for 5 mins until crispy.
Combine the tomatoes, garlic & fresh basil, pop on top of the toasty bread and enjoy!!


Why not throw in a bit of Spanish…..?!

Quick Patatas Bravas

3 potatoes cut into cubes
1 finely chopped onion
1 red chilli pepper
1 clove of garlic
2 cups  of pasata – sieved tomatoes
1 teasp of sugar
½ glass of white wine
Salt & black pepper

1.          Pop the onion in a hot pan and cook for for 3 mins tip in the garlic & chilli and continue to cook for about 5 mins.
2.          Add the pasata with the wine, bring  to the boil then simmer for 15 mins. 
3.          Season with salt, pepper and the sugar.
Place potatoes on a baking tray coating them in olive oil pop into the oven for 15 mins @ 200 or until cooked.
4.          Transfer to a serving bowl and pour warm sauce over the potatoes
